Leaves have begun to appear on the peppers

So far, 5 of the 11 pepper plants being overwintered have either small patches or leaves, or showing some green growth of some kind.

Due to the appearance of leaves, I have went ahead and placed a grow light about 8 inches to a foot away from the plants. I have the grow light on a 4 hour on cycle, and am leaving the room around 60 degrees. The hope being that cooler temps with limited light will help to keep the 6 plants not showing growth dormant, and promote slow growth on the plants being too stubborn to stay dormant.
Planted some lettuce
Given that I have the grow light is on, I have tossed about a dozen seeds to the Mesclun Mix lettuce in a 5 inch cell. I will be making a better effort to do continuous planting of lettuce given the oversupply i have of it.
